Fennel and Celeriac Soup


I got some fennel seeds from a little shop I know in Amsterdam yesterday, so for lunch today, I made the Fennel and Celeriac Soup off vegalicious.


I didn't grind the fennel seeds and the smell of them roasting in the pan was very nice. It smells like what Willy Wonka would do with liquorice.

I replaced the stock and white wine with water and added rosemary. It turned out very well. It's a hearty soup, but with a sweet fennel flavour. The fennel seeds in particular really help accentuate that flavour.



It's a simple soup, but it is aromatic and flavourful. It tastes like it should be complicated.

I've had my eye on this soup ever since it was posted! I love fennel so much... the problem is, I've run out of fennel seeds and can't make this until I get some!

That's also why it took me a while to get around to it. It's definitely worth it, though. Even the celeriac seems to start to taste like fennel!

I should actually be adding a recipe with roasted fennel tonight.
